A Kiss For Luck

When I was a little, my grandpa taught me how to fish. Sunflower seeds and life-jacket in hand, my cousins and I spent many summers on the lake learning how to hook our bait and fillet our fish. Grandpa always told us that we needed to kiss our worms for good luck, but I didn’t buy that advice!

For the past couple of years I have found myself fishing more than ever before. With my best friend/personal fishing mentor and thermos of coffee in tow, getting out on the lake or river in the early morning has become one of my favorite summer activities.

Lake of The Prairies is Still a Favourite

Last year I had fishing licenses from five different provinces and states. Although I learned how to fish on a spin rod, I have branched out and now own my first pair of chest waders and a fly rod!  Fishing in Montana, Minnesota, Alberta, and Ontario is great fun, but my favorite place to fish is at home on Lake of the Prairies.

Gluten Free Beer Battered Fish

Fresh pickerel is one of my favorite foods in any form whether it is fish tacos with creamy coleslaw, grilled on the BBQ, in a fish cake, or fried in canola oil!

This Beer Battered Manitoba Pickerel recipe can easily be altered using white rice flour instead of regular flour and club soda or gluten free beer instead of the Fort Gary Ale.  I usually add one egg and 1 tsp of baking powder to the batter to act as holding agents.

Beer Battered Fish

Beer Battered Fish | www.blog.canolarecipes.caIngredients:
8 cups canola oil (2 L)
1 cup all-purpose flour (250 mL)
1/2 tsp garlic powder (2 mL)
1 bottle Fort Gary Ale (1 bottle )
1/2 tsp cayenne pepper (2 mL)
1/2 tsp onion powder (2 mL)
1 tsp salt (5 mL)
1 1/2 tsp pepper (7 mL)
1 lbs Lake Winnipeg pickerel (500 g)
1/2 cup all-purpose flour, for dredging (125 mL)

Directions:
Preheat canola oil to 390 F to ensure the oil remains at the optimal frying temperature of 375 F when you place the fish in the oil.

In a shallow bowl mix 1 cup flour, cayenne pepper, onion powder, garlic powder, salt and pepper. Add beer and mix until smooth. Set aside for 15 minutes.  Dredge pickerel fillets in 1/2 cup (125 mL) flour before dipping in batter.

Once fillets have been dredged with flour and then dipped into batter, place in hot canola oil to deep fry. Cook until golden brown. Remove from canola oil with slotted spoon and drain on paper towels.
