Chocolate and Grilled Pineapple Dessert Pizza

This dessert pizza is a chocoholics dream come true: melted dark chocolate, grilled fruit and sweet pizza dough. But you’re not limited to just pineapple. Try different stone fruit like mango or nectarines—just make sure you grill them!

  • Ingredients

    Sweet Pizza Dough:

    • 5 cups all-purpose flour
    • 1 package rapid rise yeast
    • 1 tsp salt (15 mL)
    • 3 Tbsp canola oil (45 mL)
    • 1/4 cup honey (60 mL)
    • 1 3/4 cup warm water (425 mL)
    • 2 tsp canola oil  (10 mL)

    Grilled Pineapple

    • 4 - 1 inch slices fresh pineapple
    • 2 tsp canola oil  (10 mL)

    Toppings

    • 1 cup whipping cream (250 mL)
    • 2 Tbsp sugar (30 mL)
    • 1 tsp vanilla extract  (5 mL)
    • 2 cups chopped dark chocolate (500 mL)
    • 1 cup toasted chopped walnuts (250 mL)
  • Directions
    1. In the bowl of a stand mixer using a dough hook, combine flour, yeast, salt, 3 Tbsp (45 mL) canola oil, honey, and warm water. Mix on low speed until mixture comes together adding additional flour or water by the tablespoonful if necessary. Let mixer run for about 5 minutes to knead the dough.
    1. Cover dough and let it rest for about 10-15 minutes.
    1. Roll enough dough to form four, 1/4” (6 mm) thick rounds about 4.5” (11 cm) in diameter.
    1. Brush cut side of pineapple slices with canola oil. Place pineapple slices on an oiled barbecue grill, over high heat; cook for about 3 minutes or until seared and warmed through. Flip pineapple slices and continue to cook 1 – 2 minutes longer. Remove from heat. When cool to the touch, cut into medium size segments.
    1. In the bowl of a stand mixer with whisk attachment, add whipping cream and whisk until soft peaks form.
    1. Whisk in sugar and vanilla. Set aside.
    1. Preheat a barbecue over medium heat. Lightly oil each side of dough with oil. Brush grates with canola oil before grilling dough. Place each piece of dough on the grill and cook for about 3 minutes. Flip and repeat until both sides are evenly cooked. Remove dough from grill.
    1. Place 1/2 cup (125 mL) chopped chocolate on each pizza and 1/4 cup (60 mL) walnuts. Prepare grill for offset cooking by turning off one set of burners. Place pizzas back on the grill on the unheated side; close the lid and cook until chocolate has melted, about 5 minutes. Remove pizzas from the grill and top each one with pineapple segments. Cut each pizza into quarters, Top with a dollop of whipped cream and serve immediately.
