Cucumber and Feta Cheese Toasts

  • Ingredients

    ½ baguette or 1 demi baguette, sliced into ¼ inch (0.6 cm) slices (about 25 slices)

    2 Tbsp canola oil (30 mL)

    6 oz feta cheese (170 g)

    2-3 Tbsp canola oil (30 - 45 mL)

    1 Tbsp lemon juice (15 mL)

    2 tsp lemon zest (10 mL)

    pepper to taste (0.5 mL)

    1 small English cucumber, very thinly sliced (1)

    2 Tbsp Fresh dill, chopped (30 mL)

  • Directions
    1. Preheat oven to 400°F (200°C). Place baguette slices on a baking sheet. Drizzle with 2 Tbsp (30 mL) canola oil. Bake 10 minutes. Turn slices over and bake about 2-3 minutes longer, or until bread is toasted (dry) and golden brown in colour.
    2. Meanwhile, combine feta cheese, canola oil, lemon juice and zest in a mini food processor. Pulse to creamy texture. (Mixture can also be mashed together with a fork.) Season with pepper.
    3. Spread feta mixture evenly on toasted baguette slices. Top with cucumber slices and sprinkle with dill.
