Gluten Free Flax Bread

Don’t let a gluten free dietary restriction prevent you from enjoying bread a fresh loaf of bread! This loaf contains flax seed, which are high in fibre and good for you. Enjoy it as you would eat loaf of bread. Tastes great when fresh out of the oven.

  • Ingredients
    • 2 cups rice flour (500 mL)
    • 1/2 cup amaranth flour (125 mL)
    • 1 cup tapioca starch (250 mL)
    • 1/4 cup ground flax seed (60 mL)
    • 1 Tbsp xanthan gum (15 mL)
    • 2 Tbsp sugar (30 mL)
    • 1 tsp salt (5 mL)
    • 2 Tbsp rapid rise yeast (30 mL)
    • 1 egg (1 )
    • 1/4 cup canola oil (60 mL)
    • 1 3/4 cups warm milk (425 mL)
    • 1 tsp vinegar (5 mL)
  • Directions
    1. Preheat oven to 375°F (190°C).
    2. Spray a 9×5 inch (23×13 cm) bread pan with canola oil.
    3. In large mixing bowl, combine rice flour, amaranth flour, tapioca starch, ground flax seed, xanthan gum, sugar, salt and yeast.
    4. In a second large bowl, beat together egg, canola oil, warm milk and vinegar.
    5. Add wet ingredients to dry ingredients and beat for 4 to 5 minutes at low speed. Batter will be very sticky.
    6. Scrape dough into oiled bread pan. Let dough rise in a warm place until almost double in size, about 40 minutes.
    7. Bake loaf for 50-60 minutes or until the loaf sounds hollow when tapped.
    8. Remove from pan and place on wire rack to cool.
