Fusion Grilled Salmon with Fruit Salsa

A great way to grill a salmon steak. The ginger, garlic and sriracha give it a kick, while the avocado and mango fruit salsa compliments the flavours well together.

  • Ingredients

    Fusion Grilled Salmon

    • 1/4 cup canola oil (60 mL)
    • 2 Tbsp sodium-reduced soy sauce (30 mL)
    • 2 Tbsp fish sauce (30 mL)
    • 1 tsp granulated sugar (5 mL)
    • 1 clove garlic, minced (1)
    • 1/2 tsp fresh ginger, minced (2 mL)
    • 1 tsp Thai chili sauce (5 mL)
    • 6 (4 oz/125 g) salmon steaks (6)

    Fruit Salsa

    • 1 mango, cubed (1)
    • 1 avocado, cubed (1)
    • 1 tomato, finely chopped (1)
    • 1 green onion, thinly sliced (1)
    • 1/4 cup red onion, finely chopped (60 mL)
    • Juice of one lime (2 Tbsp/30 mL)
    • 2 Tbsp canola oil (30 mL)
    • 3 Tbsp each chopped cilantro and mint (45 mL)
    • ¼ tsp salt (1 mL)
    • ¼ tsp ground black pepper (1 mL)
  • Directions

    Fusion Grilled Salmon

    1. In a re-sealable bag, add canola oil, soy sauce, fish sauce, sugar, garlic, ginger and Thai chili sauce. Add salmon steaks. Marinate for 2-4 hours. Turn at least once.
    2. Grill steaks for 3-4 minutes per side or until fish flakes easily. Serve with ½ cup (125 mL) Fruit Salsa (recipe follows).

    Fruit Salsa

    1. In a bowl, combine mango, avocado, tomato, onions, lime, canola oil, cilantro, mint, salt and pepper. Refrigerate.
