Grilled Chicken Thighs with Sweet Plum Sauce

This tasty, sweet plum sauce is just what you need for a quick supper on those busy nights. The sauce is so easy to make it’ll make you toss that old prepackaged bottle from the fridge. Pour over grilled chicken and serve with a side salad for a quick but delicious meal.

  • Ingredients
    • 2 cans plums (2 cans)
    • 1/4 cup brown sugar (60 mL)
    • 1/4 cup lemon juice (60 mL)
    • 3 garlic cloves, minced (3 )
    • 4 green onions, finely chopped (4 )
    • 1/2 tsp hot pepper sauce (2 mL)
    • 3 Tbsp canola oil (45 mL)
    • 12 chicken thighs, with skin and bones (12 )
  • Directions
    1. Drain plums and reserve juice. Remove pits from plums. Puree plums and juice in food processor or blender.
    2. In a medium saucepan, combine pureed plums with remaining ingredients, except canola oil and chicken. Whisk to blend ingredients. Place over medium heat and bring to a boil while stirring. Reduce heat to low and simmer 10 minutes.
    3. Meanwhile, in a large frying pan, heat canola oil over medium heat. Add chicken and cook on both sides until golden brown and juices run clear. Remove chicken from pan and place on serving platter. Pour sauce over chicken and serve immediately. Alternatively, simply pass sauce with the chicken thighs.
