Rainbow Coleslaw

This bright and beautiful coleslaw is perfect for summer barbecues or alongside your favourite fish tacos. Mangos add a touch of sweetness to round out the zip of radish. There is no better way to salute summer than beer-infused vinaigrette!

  • Ingredients

    Dressing

    1 shallot, minced (1)

    1 tsp Dijon mustard (5 mL)

    1 clove garlic, minced (1)

    3 Tbsp cider vinegar (45 mL)

    1 - 2 Tbsp honey (15 - 30 mL)

    ¼ cup favourite beer (60 mL)

    ¼ cup canola oil (60 mL)

    Slaw Mix

    4 cups shredded green cabbage (1 L)

    1 cup cucumber, julienne (250 mL)

    1 cup carrot, julienne (250 mL)

    1 cup mango, julienne (250 mL)

    1 cup thinly sliced celery (250 mL)

    6 - 7 radishes, julienne (6 - 7)

  • Directions
    1. Combine all ingredients for dressing in a bowl and whisk to combine. Set aside.
    2. Combine all vegetables and mango in a large salad bowl. Pour dressing over and toss.
