Beet Pesto

Try this fantastic nutty beet pesto sauce with pasta, on bread or as a pizza sauce to your favourite home-made pizza! Delicious.

Makes
3-4 cups (750 mL- 1L)
  • Ingredients
    • 3 large beets  (3)
    • 2 cloves garlic, cut in half  (2)
    • ½ cup coarsely chopped walnuts (125 mL)
    • ¾ cup grated Parmesan cheese (175 mL)
    • 2 tsp lemon juice (10 mL)
    • 1/3 cup canola oil (75 mL)
    • ½ tsp pepper  (2 mL)
  • Directions
    1. Heat oven to 400°F (200°C). Wash and trim beets. Wrap in foil and place on a small baking sheet. Bake for 60-70 minutes or until beets are tender.
    2. Peel beets and cut into chunks. Place in food processor.
    3. Add remaining ingredients and puree to desired consistency.
