2 Tbsp canola oil (30 mL)
½ tsp salt (2 mL)
½ tsp pepper (2 mL)
1 tsp garlic powder (5 mL)
1 tsp onion powder (5 mL)
1 tsp cumin (5 mL)
1 tsp oregano (5 mL)
1 tsp coriander (5 mL)
1 tsp pasilla chili powder (or regular chili powder) (5 mL)
1 cup panko bread crumbs (250 mL)

8 chicken thighs, bone in, skin on (8)

- In a medium sized bowl, combine canola oil, salt, pepper, garlic powder, onion powder, cumin, oregano, coriander. pasilla chili powder and panko crumbs.
- Press chicken pieces into mixture to cover completely.
- Place chicken pieces on foil lined baking sheet. Sprinkle any excess crumbs over top.
- Bake chicken at 400°F (200°C) for 35 – 40 minutes, internal temperature should read 165°F (74°C).
