    Rub

    2 Tbsp canola oil (30 mL)

    ½ tsp salt (2 mL)

    ½ tsp pepper (2 mL)

    1 tsp garlic powder (5 mL)

    1 tsp onion powder (5 mL)

    1 tsp cumin (5 mL)

    1 tsp oregano (5 mL)

    1 tsp coriander (5 mL)

    1 tsp pasilla chili powder (or regular chili powder) (5 mL)

    1 cup panko bread crumbs (250 mL)

    Chicken

    8 chicken thighs, bone in, skin on (8)

  • Directions
    1. In a medium sized bowl, combine canola oil, salt, pepper, garlic powder, onion powder, cumin, oregano, coriander. pasilla chili powder and panko crumbs.
    2. Press chicken pieces into mixture to cover completely.
    3. Place chicken pieces on foil lined baking sheet. Sprinkle any excess crumbs over top.
    4. Bake chicken at 400°F (200°C) for 35 – 40 minutes, internal temperature should read 165°F (74°C).
