Creamy Cambozola Bacon Dressing

Cambozola cheese originates from Germany. It's like a mouth-watering combination of Brie and Blue cheese. Add some smokey bacon and canola oil to make this the perfect dressing!

  • Ingredients
    • 1 egg yolk (1)
    • 1/2 Tbsp white wine vinegar (7 mL)
    • 1 tsp fresh tarragon, minced (5 mL)
    • 1/2 cup canola oil (125 mL)
    • 3 oz Cambozola cheese, rind removed (90 g)
    • 4 sliced bacon, cooked and crumbled (4)
  • Directions

     

    1. In a mixing bowl, combine yolk, vinegar and tarragon. Whisk mixture until smooth.
    2. Slowly pour in canola oil in a steady stream, whisking constantly until blended.
    3. Transfer mixture to a food processor with Cambozola and process until smooth. Transfer mixture to a bowl and fold in bacon. Season with salt and pepper to taste. Use at once; dressing is perishable and will not keep.
