- 1 egg yolk (1)
- 1/2 Tbsp white wine vinegar (7 mL)
- 1 tsp fresh tarragon, minced (5 mL)
- 1/2 cup canola oil (125 mL)
- 3 oz Cambozola cheese, rind removed (90 g)
- 4 sliced bacon, cooked and crumbled (4)

- In a mixing bowl, combine yolk, vinegar and tarragon. Whisk mixture until smooth.
- Slowly pour in canola oil in a steady stream, whisking constantly until blended.
- Transfer mixture to a food processor with Cambozola and process until smooth. Transfer mixture to a bowl and fold in bacon. Season with salt and pepper to taste. Use at once; dressing is perishable and will not keep.
