Fizzy Orange Sponge Cake

This 2012 Red River College Baking Competition wowed the crowd and won second place! It’s secret ingredient? Orange Fanta! This moist cake is then finished with fruit atop fluffy sour cream icing. This recipe is definitely a go for your child’s next birthday party.

  • Ingredients

    Cake

    • 4 eggs (4 )
    • 1/2 cup granulated sugar (125 mL)
    • 1/4 tsp vanilla (1 mL)
    • 3 Tbsp canola oil (45 mL)
    • 1/3 cup orange carbonated beverage, like Fanta (75 mL)
    • 1 cup all-purpose flour (250 mL)
    • 1 1/2 tsp baking powder (7 mL)

    Topping

    • 1 cup whipping cream (250 mL)
    • 1-10 g pkg (Dr.Oetker Whip It) stablizer (1 )
    • 3/4 cup icing sugar (175 mL)
    • 1 cup sour cream (250 mL)
    • 1/4 tsp vanilla (1 mL)
    • 1/2 cup canned peaches (or apricots), drained, finely chopped (125 mL)
  • Directions

    Cake

    1. Preheat the oven to 350°F (180°C). In a large bowl, beat eggs on high speed for 1 minute. Slowly add sugar and then vanilla. Continue beating for another 2 minutes until eggs are very foamy. Add canola oil and orange carbonated beverage. Stir gently to combine.
    2. In a separate small bowl, combine flour and baking powder. Carefully fold flour mixture into liquid ingredients. Do not over-mix.
    3. Pour batter into an oiled and parchment paper lined 9×9 inch (22 x 22 cm) baking pan. Bake at 350°F (180°C) for about 20-25 minutes or until toothpick inserted into the middle of the cake comes out clean. Let cake stand for 10 minutes and then turn out of pan and cool completely on a wire rack.

    Topping

    1. To prepare topping: In medium size bowl, whip the cream for about 20 seconds. Add the stabilizer and the icing sugar. Continue beating until stiff peaks form. Fold in sour cream, vanilla and peaches. Spread evenly over cooled cake. Refrigerate.
    2. Before serving, garnish cake with additional peach slices, if desired.
