- 1 small red onion, peeled, stemmed, cut into ½-inch (2.5 cm) rounds (1)
- 1/2 cup canola oil (125 mL)
- 1 Tbsp whole grain mustard (15 mL)
- 3 Tbsp apple cider vinegar (45 mL)
- 1 tsp honey (5 mL)

- Preheat oven to 400°C (200°F) heat. On a baking sheet, place onion rings and roast until charred and soft. Remove from heat and let cool.
- In a food processor, combine all ingredients and process until smooth. Season with salt and pepper to taste. Keep in the refrigerator for 3-5 days.
