Honey Crullers

Honey Crullers

Light, fluffy, sweet and delicious these crullers are the crème de la crème. Be sure to have a wire rack available after frying. Enjoy, and don’t forget to share Recipe courtesy of Red River College, Culinary Arts program.

  • Ingredients

    6 Tbsp canola oil (90 mL)

    ¾ cup milk (175 mL)

    1 Tbsp sugar (15 mL)

    1 cup all purpose flour (250 mL)

    ½ tsp salt (2 mL)

    2 tsp vanilla (10 mL)

    4 eggs (4)

    Canola oil for deep frying (about 1 L)

    Honey Glaze

    1 ½ cups icing sugar (375 mL)

    4 Tbsp milk (60 mL)

    2 Tbsp honey (30 mL)

    2 tsp lemon juice (10 mL)

  • Directions

    1.Heat canola oil, milk and sugar in medium size saucepan. Bring to a boil. Immediately stir in all of the flour and salt. Stir vigorously until dough forms that pulls away from the sides of the saucepan. Continue to cook on medium heat for about 1 minute, stirring continuously.

    2.Transfer mixture to a large mixing bowl. Using a mixer, beat the mixture, for about 1 minute, to slightly cool the ingredients. Beat in the vanilla. On medium speed, beat in eggs, one at a time, making sure to blend each egg into flour mixture completely before adding another egg. Transfer batter to a pastry bag fitted with a ½ inch (1 cm) star piping tip. Set aside for a few minutes.

    3. Fill a saucepan with about 2” (5 cm) canola oil. Heat to 350°F. (180°C)

    4. Cut out 8 to 10, 3” (7 cm) squares of parchment paper. Lightly spray them with canola oil spray. Pipe a 2 1/2” (6 cm) ring of cruller mixture onto each square. When the oil has reached the desired temperature, place each cruller into the oil. They should slide off the paper but if not, the paper will separate from the cruller and the paper can be retrieved from the oil with a pair of tongs. Flip crullers once and fry them until golden brown on both sides, about 2 – 3 minutes. Meanwhile, combine ingredients for the Glaze.

    5. When crullers have cooled, dip top halves into the glaze. Place on a wire rack on top of a baking sheet to catch the drippings.
