- 3 large tomatoes chopped (3)
- 2 Tbsp red onion finely chopped (30 mL)
- 4 garlic cloves crushed (4)
- 2 Tbsp canola oil (30 mL)
- 1 Tbsp fresh oregano chopped (15 mL)
- 1 Tbsp fresh basil chopped (15 mL)
- 2 Tbsp vinegar (30 mL)
- 18-20 whole grain baguette sliced 1/2 inch (1.25 cm) (18-20)
- 3/4 cup reduced-fat old cheddar cheese (175 mL)

- Preheat oven to 400°F (200°C).
- In a large bowl, combine tomatoes, onions, garlic, canola oil, oregano, basil and vinegar. Spoon a heaping tablespoon of tomato mixture onto whole-
- grain baguette slices. Cover with approximately 1 tsp (5 mL) of cheese.
- Bake for 10 minutes.
