Spicy Beef and Jicama Lettuce Wraps

While it may look like a turnip, jicama is actually a low calorie root vegetable with a mild sweet flavour and the crunch of a carrot. Mixed with ginger, peanuts and beef, jicama takes these wraps to another level.

  • Ingredients
    • 2 Tbsp canola oil (30 mL)
    • 1 lb ground lean beef or ground sirloin (500 g)
    • 1 Tbsp fresh minced ginger (15 mL)
    • 3 Tbsp chile-garlic sauce (45 mL)
    • 1 jicama, peeled and cut into matchsticks, about 2 cups (500 mL)
    • 2 large peeled carrots, coarsely grated
    • 1 cup of julienned snow peas (250 mL)
    • 12 Bibb or Butter lettuce leaves
    • ½ cup toasted and chopped salted peanuts, for garnish (125 mL)
  • Directions
    1. In a nonstick skillet set over medium high heat, heat canola oil.
    2. Add beef and ginger and cook until beef is no longer pink.
    3. Add chile-garlic sauce to beef and mix to incorporate.
    4. To Assemble: Place a spoonful of warm beef mixture into 1 lettuce leaf and top with jicama, carrots, snow peas and peanuts. Serve immediately.
