What a year it has been!  I am feeling hopeful, grateful, and looking forward to the sunshine-filled days to come.  I love April as it seems to blossom happiness to the year no matter what.  I am looking forward to planning my garden, dusting off the kayak, canoe, and paddleboard and getting outside to enjoy the fresh spring air. Planning parties with family and friends (one of my other favorite things to do) would be wonderful, but I know I will have to wait just a little longer to do that.

This is the menu that I am going to prepare when we can get together:

Grilled Peach and Corn Salad with Cajun Shrimp

Balsamic Beef with Polenta

Yogurt Lemon Cake with Berry Sauce

And a very fancy fizzy drink.

  1. This month I am loving the sound of the birds chirping outside my window in the early morning, it’s nice to have the windows open again

  2. Looking forward to all the plant life spring has brought, and also the lovely flavours in every dish.

  3. I am looking forward to planning my vegetable garden and all the dishes I can create with the fresh produce!

  4. For Earth Day, my family and I are taking a hike. We will also be dropping wildflower seeds all over the neighbourhood for bees and spending time at a seminar (a bit like TEDx) the day after to listen to a series of lectures. Thanks!

  5. I will be celebrating Earth Day by keeping all the lights off, having the windows open and keeping the tv off as well

  6. For Earth Day I will be cleaning up the litter around our home, cleaning up our flower beds, opening the windows & turning off our furnace.

  7. I’m going to make it a learning time for the kids. We’ll be discussing what they’ve learned, share more, and then put it into practice.

  8. I’m going to wash all the windows to allow more sun and warmth in to heat my home and use less electricity.

  9. The kids are going to work out a programme for Earth Day for the whole family. They are currently doing the research and will find activities for all of us to do.

  10. I’m going to get all the recyclables together, organise them, and take them to their various depots when they open.

  11. The first thing is putting on my calendar in red so I don’t forget. Then on the day, I’ll get out into the neighbourhood and clean up what I can during the pandemic. And make sure all the non-essential appliances etc., are unplugged until needed.

  12. on earth day, I took in my plastic recycling! We are lucky here in BC to be able to bring back plastics and chip bags etc.
