Homemade Pizza Dough Recipe

Ingredients:

1/2 cup whole-wheat flour (125 mL)
1 1/2 – 2 cup all-purpose flour (375-500 mL)
2 Tbsp wheat germ (30mL)
1/4 tsp salt (1 mL)
1 package (7g) quick rising instant yeast (1 )
1 cup hot water (250 mL)
1 Tbsp canola oil (15 mL)

Directions for Pizza Dough:

In a large bowl, mix whole-wheat flour, 1 cup all purpose flour, wheat germ, salt and yeast. Stir in hot water and canola oil. Gradually stir in enough of remaining all-purpose flour to make a soft dough.

Knead on lightly-floured surface until smooth and elastic. Shape dough into ball. Cover and let rest for 10 minutes before rolling out.

It’s 4:30pm and what are we having for dinner tonight?

When I find myself standing in the kitchen in a rush to get dinner on the table I grab my favourite bowl, head for the flour and make homemade pizza dough.

There is something about making this dough, getting my hands messy, knowing that I’m making a meal from scratch that relaxes me and takes away the dinner rush pressure.

While I’m measuring and mixing I’m deciding what I have on hand that is going to make this pizza night another great meal.  Unless pizza night is a pre-planned event I rarely make pizza with traditional toppings.

Here are my favourite last minute pizza toppings:

1. Green tomato relish or salsa – this is our quick go-to “pizza sauce” with some zip.

2. Herbed sour cream – use up that part container of sour cream by mixing in basil, garlic, pepper or any combination of fresh herbs you have around and use as a creamy “pizza sauce”.

3. Potatoes  – leftover potatoes make a great addition and are fantastic paired with an herbed sour cream base.  Sliced baked are a personal favourite but sliced roasted or mashed would be great too.

4. Beets – leftover roasted beets are great on salad but equally great on pizza.

5. Chili – put your leftover chili on the pizza dough, sprinkle with cheese and bake.  It’s like breadsticks topped with yummy goodness.  Our family favourite is Mairlyn Smith’s Recipe.

6. Canola oil and garlic – when I’m really in a pinch I drizzle the dough with canola oil, rub minced garlic around (my kids favourite part) and top with a sprinkle of cheese.

7. Shrimp – frozen cooked shrimp can be a meal saver in many ways.  We love them on pizza.

8. Veggies that have seen crisper days – roast up all the veggies in your fridge; tomatoes, zucchini, eggplant, onion, broccoli and peppers to name a few then toss them on your pizza.

9. Greens – bake your pizza and when it’s ready to serve top with greens (arugula, spinach, baby kale or your family favourite) that have been mixed in an herbed vinaigrette.  My house calls this Pizzalad. A cross between pizza and salad.

10. Stuff it – Make the dough, divide into 4-6 balls, roll them out, layer half of the circle with your favourite toppings (including a small amount of cheese and fold it over for homemade Calzones.  We have an Easy Cheesy Calzone recipe and video that you can follow.
