Roasted Cabbage and Onions with Apples

Cabbage, apples, and onions are transformed into a comforting side dish with a hint of curry and smoky bacon. The ingredients simultaneously soften while their edges caramelize and crisp up. This sweet and savoury dish is made only more delicious with a drizzle of honey mustard sauce.

    • 8 cups chopped green cabbage (2 L)
    • 1 red onion, sliced into 1/2-inch (1.3 cm) crescents (1)
    • 1 Honeycrisp apple, cored and cut into 1/2-inch (1.3 cm) wedges (1)
    • 4 slices thick cut bacon, cut into 1/2-inch 1(.3 cm) pieces (4)
    • 3 Tbsp canola oil (45 mL)
    • 1 Tbsp curry powder (15 mL)
    • 1/2 tsp pepper (2 mL)
    • 1/2 tsp salt (2 mL)

      Honey Mustard Sauce

    • 3 Tbsp yellow mustard (45 mL)
    • 2 Tbsp honey (30 mL)
    • 2 tsp Worcestershire sauce (10 mL)
  • Directions
    1. Preheat oven to 400°F (200°C).
    2. To a large bowl, add cabbage, red onion, apple, bacon, canola oil, curry powder, pepper, and salt. Mix well and transfer to a large baking sheet.
    3. Roast on middle rack for 45-50 minutes, stirring every 15 minutes, until cabbage is brown and tender.
    4. In a small bowl, whisk the mustard, honey and Worcestershire together.
    5. Drizzle sauce over warm, roasted cabbage and serve.
