Tonight it’s Fish in Paper with Greek Salad.

It’s 4:26 pm and if you are like me, I am getting ready to leave work and head home and then it hits me, what’s for dinner? I call Mike, what do you want for dinner? His usual comment is you decide or it doesn’t matter to me.  Oh, gosh, then I think, why didn’t I pull out that chicken breast from the freezer or we only have 30 minutes before we need to go to hockey, curling, skating, boot camp, music, yoga.  What I need is something that is easy, healthy and delicious.

For most of us, preparing and making meals can be stressful when it really should be about having fun.  If you feel stressed about what to make for dinner, I am here to help.

What’s for dinner tonight?

I am suggesting Fish in Paper paired with a Greek salad (recipes below).

Fish is a healthy, low fat protein and cooks quickly.  The rule of thumb is for every 1 inch of thickness for the fish, it’s about 10 minutes of cooking time.  The other trick to keep your fish moist is using parchment paper and creating little pockets of moisture. You will never overcook your fish again.

You can use any white fish and of course local pickerel is wonderful.

It’s only 10 ingredients in the fish recipe.  We are using some of the same ingredients in both recipes and some items should be a staple in your house.

My house staples that I always have on hand:

  1. Canola oil
  2. Red wine vinegar
  3. Carrots
  4. Lemons
  5. Garlic
  6. Parchment paper

1 ½ – 2 lbs of white fish such as pickerel, sole, basa or salmon can   be used. 1 leek and or 1 red onion (the leek or red onion can be used in both   recipes) 1 bag of mini potatoes feta cheese 1 pkg fresh oregano sprigs 5 Kalamata   olives
1 pint (10 oz) of grape tomatoes (12 for the fish dish) fresh flat leaf parsley canola oil
1 red pepper red wine vinegar
2 orange pepper
1 yellow pepper
1 carrot
1 lemon
1 English cucumber
garlic
