When it came time to select our recipes for this season of The Great Tastes of Manitoba Ellen and I found ourselves talking about our family favourites.  Both of us make massive batches of pancakes almost every week and freeze them for our families.  We are both busy mom’s on the go and find that frozen pancakes in the freezer make great snacks for our little ones.

We both thought that we had the perfect recipe but realized that really we had the perfect recipe when you but them both together!  I always use bananas and Ellen likes a thiner batter so that you can make a crepe like pancake.  So, we took the best of both worlds and created Family Favourite Pancakes.  This is my new recipe and I just love it!

The bars are easy and delicious.  I make them as often as possible and keep them in the freezer for snacks on the go.

Family Favourite Pancakes (printer friendly version)

Ingredients:
1 cup flour (250 mL)
1/2 cup whole wheat flour (125 mL)
2 Tbsp sugar (30 mL)
1 Tbsp baking powder (15 mL)
1 egg
1 ripe banana, mashed
2 Tbsp canola oil (30 mL)
2 cups skim milk (500 mL)
1 tsp salt

Directions:
Preheat griddle over medium heat. Spray with canola oil. In large bowl, add flours, sugar, baking powder and salt. Mix well with a wire whisk. In medium bowl, beat egg and blend in mashed banana. Add canola oil and milk. Mix well. Pour wet mixture into dry mixture. Mix until there are no lumps. Using a ladle, spoon on about 1/4 cup (60 mL) of pancake mixture and cook until bubbles form on the top and then flip. Brown on both sides. Serve warm with fresh fruit and maple syrup.
