I am inspired by people.  So upon a recent work trip to Toronto where I met Joan Ttooulia, she inspired me to dig out of my pantry; my bread maker.

Now her recipe No Knead Whole Wheat and Quinoa Bread is perfect for the novice baker as it uses quick rise instant yeast and her instructions are easy to follow and understand.  No bread maker needed.  Joan is a Professional Home Economist from Toronto, Ontario and develops recipes as her career and is passionate about it.  I wrote about it in my last post People, Passion and Food. But that got me thinking, why don’t I make bread at home more often

Well, I have a confusion to make.  I love to cook, I like to bake, the emphasis is on like and I am truly a novice with bread making.  My mother-in-law makes bread and is a fantastic bread maker.  I have made a few loaves in my baking life but not many.

The No Knead Whole Wheat and Quinoa Bread recipe from Joan is a hearty loaf.  It was so easy to do and it turned out so delicious.  I have made it many times for family and friends and I have used the bread for the Ultimate Grill Cheese Sandwich with Apple Chutney from the 2010 Great Tastes of Manitoba season.

I have decided to get over my bread making fear and bring out the bread maker onto the counter. I am sure many of us have one in our cupboards or if you are looking for one, garage sale season is upon us now.  I now have mine on my counter.

I am loving it! And so is my family.  I think mostly my husband loves this because it really reminds him of his childhood.  I have made many times my mother-in-law’s recipe for White Bread and I have adapted a Brown Bread recipe.

I don’t use the bread maker for baking bread but I use it for all the prep and kneading that is required.  I let it rise in the oven with the light on as grandma does and I bake the bread in my oven.  Here is my mother-in-law’s recipe.

Grandma’s Alice White Bread

This recipe uses the bread maker to do all the work for you.  You want to fill the in the specific order and try not to have the yeast touch liquids.  It takes 2 hours to knead on the dough setting.

Yield: 1 loaf

Ingredients:
  • 1 1/4 cup + 2 Tbsp  skim milk (405 mL)
  • 2 Tbsp canola oil (30 mL)
  • 3 1/3 cup all-purpose flour (825 mL)
  • 2 Tbsp sugar (30 mL)
  • 1/4 tsp salt (1 mL)
  • 2 tsp bread machine yeast (10 mL)
Directions:
In the bread machine, add skim milk, canola oil, flour, sugar, salt and yeast into the dough container.  Turn machine on to the dough setting.  After the timer goes off in 2 hours, remove the dough from the bread machine container.  Roll out and put into a canola oil sprayed loaf pan (5 ¾ x 9 ¾ x 2 ¾ ).  Cover with a clean dish cloth.  Let the loaf rise for 50 minutes in the oven with the light on.  Remove dish cloth after 50 minutes.   Turn the oven onto 350 F (180 C) and bake for 40 minutes.
