Top 5 tips for a great salad dressing

1. Make sure you lettuce is perfectly dry. This will help the dressing/vinaigrette to coat and cling to the leaves.
Mix and match your greens when making salad.

2. Remember the ratio of 2:1 parts, 2 part canola oil and 1 parts acid like lemon juice, white or red wine vinegar.  Havefun experimenting with all the different types of vinegars.

3. You need an emulsify like honey or mustard to bind it all together.  Check out Jenn’s post for all the different types of vinegars, mustards and honeys she has in her kitchen.

4. Make sure your dressing/vinaigrette compliments your salad.  Think of it as the sauce that brings it all together.

5. Keep your dressing/vinaigrette in your refridgetor for up to 3 days.
