½ cup canola oil (125 mL)
¼ cup Guinness beer (60 mL)
2 tsp Worcestershire sauce (10 mL)
1 Tbsp brown sugar (15 mL)
2 cloves garlic, minced (2)
1 shallot, very finely chopped (1)
½ tsp pepper (2 mL)
2 tsp Dijon mustard (10 mL)
2 Tbsp chopped fresh tarragon (30 mL)
1 – 4 lb well-marbled beef outside round roast (2 kg)

- Combine first 9 ingredients in medium bowl. Mix well. Pour into a large re-sealable plastic bag.
- Pierce roast all over with a carving fork or large skewer. Add the beef roast to the marinade, seal the bag and marinate the roast in the fridge for at least 4 hours, or preferably overnight.
- Drain marinade from the roast and discard. Place the roast on a rack in a roasting pan. Cook roast on barbecue, using indirect heat, for 1 ½ to 2 hours or to internal temperature of 145°F (62°C) for medium-rare beef.

Beer and beef, what better combination could you ask for? A well-marbled cut of beef provides the necessary flavour to this dish, along with Dijon, and fresh tarragon. Remember, this recipe only calls for a quarter cup of Guinness, so…enjoy!
