Black Box Competition Winning Recipes

Roasted Beet Salad

In addition to the Culinary Theatre sponsorship we have the privilege of hosting a black box competition at the Assiniboine Community College in Brandon, MB. For those of you not familiar with a black box competition it is similar to an Iron Chef.  The students are timed, surprised with unknown ingredients and then judged on their creations.  This past fall, students competed for the top prize.  Kelsi Sorensen took top honours with her Roasted Beet Salad with Citrus Vinaigrette  followed by a Stuffed Chicken Breast with Bacon and a Mushroom Demi Sauce.  Alannah Moody was the runner up with her Apple and Pear Salad with Chantilly Dressing and Candied Bacon followed with her Chicken Cordon Bleu with White Wine Cream Reduction and Asparagus and Carrot Bundles with Lemon Herb Vinaigrette.

Here at MB Canola Growers we are always excited to work with students, encourage their education and make sure that they learn about canola oil.  Canola oil is a local ingredient – grown locally, promoted locally and used locally.  Over 9,000 Manitoban canola farmers make projects like these possible.  We all thank-you!
